Our brining, rubbing, resting and smoking processes and times vary significantly to provide a perfectly finished product, utilizing our secret recipe of hand blended rubs from a variety of 16 different spices and a proprietary blend of wood species for smoking. While we try to assure we always have your choice available, our finished brisket, rib and pork products take us 3 days to produce.
